If you are a family that is busy with sports, school, extracurricular activities or anything else that keeps you running then there will inevitably be a point in your week where you will be wondering how you can feed your family as you drive from one event to the next all the while avoiding the drive thru.
For me it is every spring and every fall when the kids have a million and one things happening and my husband and I have just as many. I plan and plan and plan each and every meal trying to find the best way to feed everyone while still eating at home. But no matter how much I plan, it never fails, there is always one day during the week that more than one schedule overlaps and we are all eating in the car trying to race from one event to the next.
Drive thru here we come—-NOOOOOOO!!!
I really can’t stand fast food and there are very few things you can get that are somewhat healthy options. Plus after showing the kids the “Supersize Me” documentary, they are all a little hesitant to eat food from anywhere with a drive thru. So as my parents did when I was little I often pack up PB&J sandwiches, drinks and fruit and run.
Sometimes you just want a little something more than PB&J. That is why this recipe is perfect. You can make this sandwich up ahead of time (in fact it just gets better with time) and it feeds your entire family easily on the go.
- 2 unsliced loaves (1 pound each) Italian or French bread
- 1 package (8 ounces) cream cheese, softened
- 1 cup shredded cheese
- 3/4 cup sliced green onions
- 1/4 cup mayonnaise
- 1 tablespoon Worcestershire sauce
- 1 pound thinly-sliced cooked ham
- 1 pound thinly-sliced roast beef
- 12 to 14 slices dill pickle
Cut the bread in half lengthwise. Hollow out top and bottom of loaves, leaving a 1/2 inch shell (discard removed bread or save for another use). Combine cheeses, onions, mayonnaise, and Worcestershire sauce; spread over cut sides of bread. Layer ham and roast beef on bottom and top halves. Gently press halves together. Wrap in plastic wrap and refrigerate for at least 2 hours. Remove from refrigerator and place pickles on sandwich. Cut into slices and enjoy.
