Best Cookie Ever!

I am probably late to the party on this one but I today had the best cookie ever. And it was totally by chance. I was at lunch today and ordered a turkey melt, or something. I don’t even really remember because all I can think about is the cookie. For some silly reason the waiter felt bad that my sandwich didn’t come with a side. I ordered it that way, so I’m not sure why he felt compelled to add to my lunch, but in retrospect I’m sure glad he did! It was a chocolate cookie filled with peanut butter filling–it might as well have been a Reese’s peanut butter cup. Honestly it was one of the best cookies I have ever had.

Although I am a cookie girl and they are my preferred choice of treats, I am not crazy about nuts (well not walnuts) on my cookies. The cookie he served us was a chocolate cookie which appeared to have walnuts in it. But I smiled, said thank you and set it aside.

We finished eating our lunch and while we sat there visiting, I decided to go ahead and pick at the chocolate cookie. OMG, was I surprised when I broke the cookie in half. I completely expected this cookie to be like a brownie with nuts when in actuality it was more like a Reese’s peanut butter cup made into a cookie.

This cookie was not full of walnuts like I expected, it had been rolled in a few chopped peanuts prior to being baked. Once I took a bite of this amazing cookie I did not even notice the nuts on the outside, all I tasted was the fabulous combination of chocolate and peanut butter.

So what do you do when you have tried a cookie that is as memorable as this one? You go home and try to recreate it of course!

I quickly began scouring the internet looking for the perfect cookie recipe. I found several that I thought would work but the best one I found was a Better Homes and Garden recipe. However, I have made a few minor, well, shall we say, improvements.

I hope you enjoy this recipe as much as I have.

Peanut Butter Filled Chocolate Cookie Recipe


Cookie dough:

  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup peanut butter
  • 1 egg
  • 1 tbsp milk
  • 1 tsp vanilla
  • 1/2 cup chopped peanuts (optional)

Peanut Butter Filling:

  • 3/4 cup confectioners sugar
  • 1/2 cup peanut butter
  • 2 tbsp granulated sugar

Preheat oven to 350

Sift together the flour, cocoa powder and baking soda in a medium bowl.

In a large bowl beat together butter, 1/2 cup granulated sugar, brown sugar and 1/4 cup peanut butter until well combined. Add egg, milk and vanilla. Beat well. Gently mix in the flour mixture until incorporated. Form the chocolate dough into balls and set aside.

For the filling combine confectioners sugar and 1/2 cup peanut butter in a mixing bowl and beat until smooth. Form into balls.

Working on a a nonstick surface like wax paper, gently flatten each chocolate ball. Top with peanut butter ball. Carefully fold chocolate dough around the peanut butter ball and seal the edges. Roll dough into a ball.

Place balls on baking sheet. Lightly flatten with the bottom of a glass dipped in 2 tablespoons granulated sugar. Optional: sprinkle with chopped peanuts.

Bake cookies for about 8 minutes, until the surface begins to slightly crack. Let cool for 1 minute on the sheet. Transfer to wire racks and cool completely.

Then enjoy the best. cookie. ever.
