What’s for dinner tonight – Meatballs
A family favorite in our house is meatballs for dinner. Not the kind you normally would have with spaghetti and marinara sauce. These are more like balls of meatloaf with a twist. The twist being french onion soup.
Everyone puts onions (well almost everyone 🙂 ) into their meatloaf and meatballs. A large part of the flavor comes from the onions. By mixing the onions from french onion soup into your meat mixture and then pouring the broth over the meatballs prior to cooking–that kicks it up a whole new notch.
For the health-conscious, use a lean ground beef. By using a leaner beef, you are eliminating the excess fat and ultimately eliminating the small portion of this recipe that is not the healthiest. For our family of six, I usually make a side of mashed potatoes or baked potatoes, as well as a vegetable. The kids and I eat both sides–however my husband (the more health conscious one) chooses to have just the meatballs and vegetables. Making it an extremely healthy dinner choice.
Ingredients:
- Approximately 2 lbs of ground beef (a little more or a little less is acceptable)
- 2 cans of french onion soup
- 1 Egg
- 2-3 tbsp. flour
- 1/2 cup ketchup
- 3 tbsp. Worcestershire sauce
Directions:
Step 1: Pre-heat oven to 350 degrees
Step 2: Separate broth from Onions in French Onion Soup and set broth aside.
Step 3: Combine separated onions, hamburger, egg and flour, ketchup and Worcestershire sauce. (It is easiest to mix by hand.) Mix until all ingredients are combined thoroughly.
Step 4: Form palm size balls out of meat mixture and place into 9×13 baking dish.
Step 5: Pour separated broth from French Onion Soup over meatballs.
Step 6: Bake for 45 minutes or until meatballs are cooked thoroughly.
